VINYEAST composition is 90 – 97 percent dry matter and can contain from 30 to 45 percent crude protein nitrogen, 25 – 35 percent carbohydrates, and 3 – 7 percent lipids. A quite important fraction of the nitrogen is under the form on nucleic acids (up to 5 – 6 %). The amino acid proﬁle is close to soybean meal and therefore well adapted to animal nutrition. It is rich in glutamic acid and lysine (up to 3 %). VINYEAST is also naturally rich in B vitamins such as biotin, thiamine and folic acid.
